Oh really? That sounds fun.

What’s up with me you ask?

WELL, something sort of uber exciting….see these Banoffee Bars? They are going to make you fall in love with me. And if you feed them to someone else, they will magically make them fall in love with YOU! Honestly. I sent most of these over to Gord’s office last week and now every co-worker of him wants to marry me. Kinda makes the workplace a tad bit awkward. Oh well.

So Banoffee is typically made in pie form across the pond in ye old England. Pretend I just said that with a british accent.

Why am I going all English on you?

Well, The Real Housewives of New Jersey made me do it. And Bethenny. And Top Chef. {Ok, not really.} But, all these shows are on Bravo and there’s a new show starting this Wednesday at 10/9c called Around the World in 80 plates. Have you seen the commercials? Well, I got to see the first episode over the weekend and it’s basically like Top Chef meets The Amazing Race. Chefs are on teams and travel to different cities around the world doing food related challenges. Pretty cool concept and makes for great tv.

Their first stop is in England so I thought I’d make a sweet treat with a nice little nod to the motherland. Not my motherland. Other peoples motherlands. {–>I really just like saying motherland.}

I have a friend from England {hi Rob!} who used to be our neighbor back in Idaho. Him and his wife Erin have 2 little girls and we miss them so much! #bestneighborsever I remember one late night when we were playing cards with them {or were we watching shows on Hulu?} when they talked about a Banoffee Pie Erin made with shortbread, toffee, bananas and cream. Both of them raved about it. So, that’s what I thought of immediately when trying to come up with an English recipe. And ladies and gents, this is something to write home about. So easy to make and so creamy, decadent and delicious that you will blissfully fade into sweet sugar comas never wanting to wake again. Let’s make some!

Here’s how you do it: {don’t be surprised at how easy these are….only 8 ingredients needed!}

Cookie dough

Start by making the shortbread base. All this is is softened butter, sugar, flour and vanilla. Stir it up until a dough starts to come together…

and press it into a greased 8×8 glass dish. Bake this for 10 minutes.

Banoffee mixture

After that, pour over a can of sweetened condensed milk and bake some more.

Basically, you’re cooking the shortbread and turning the sweetened condensed milk into toffee in one fell swoop. Once you pull this out of the oven, everything should be pretty much set. Meaning not a whole lot of jiggle. Don’t worry if it looks ugly. Mine certainly did and everything turned out just fine. Take a breath. And set this aside to cool.

Once the bars are at room temperature, remove them from the glass baking dish and add a layer of bananas

and a whole lotta whipped cream! Mmmmm……

Banoffee Bars are a scrumptious layer after layer of goodness with shortbread, toffee, bananas, and a creamy layer of whipped cream.

Ingredients

Instructions

  • Preheat oven to 350 degrees. Line an 8×8 glass dish with parchment paper and lightly spray with nonstick cooking spray. Set aside. In large bowl, combine butter, sugar, flour and vanilla until dough forms. Press evenly into the bottom of prepared dish. Bake 10 minutes.
  • Remove from oven and gently pour sweetened condensed milk evenly over hot cookie base. Reduce oven temperature to 325 and bake 15-17 minutes more until milk darkens and turns into toffee.
  • Remove from oven and cool to room temperature. Using the foil or parchment, lift bars out of glass dish. Slice bananas and place over top of toffee. Spread whipped cream over top of bananas. Slice and refrigerate. When ready to serve, drizzle caramel sauce over top.

    Oh my goodness I can’t wait to make these! Already printed the recipe. Banoffee pie is one of my favorite treats to make, but it’s so decadent that I only make it a couple of times a year. Maybe this can be my substitute? It’s all about portion control, right??
