Chocolate Mint Brownie Bites

Chocolate Mint Brownie Bites are super easy to make with a mint truffle kiss hidden inside topped with some minty buttercream. Bite-sized Brownies with tons of minty flavor!
Chocolate Mint Brownie Bites | Super Easy!
Super easy, just like my classic Brownie Bites but with a mint truffle kiss hidden inside topped with some minty buttercream. Totally to die for, easy to make, and make adorable for gifts, snacks, or desserts.
Main Ingredients Needed
Some pantry staples plus a couple of specialty items are needed to create these amazing Chocolate Mint Brownie Bites. Here’s what you need:
- Butter + Bittersweet Dark Chocolate – I used Scharffen Berger for the chocolate since it’s such a good quality of chocolate and butter for moisture!
- Cocoa Powder + Vanilla – again Scharffen Berger for the cocoa powder and vanilla for flavor.
- Sugar – to sweeten!
- Eggs – for structure.
- Baking Powder – this gives the brownies some lift.
- Salt – to balance the flavors.
- Flour – this fills out the rest of the brownie bites.
- Mint Truffle Kisses – these are seasonal but you can sometimes find them before Christmas rolls around or a few stragglers after it passes. Feel free to replaces these with an Andes Mint if you can’t find them.
For the Mint Frosting
- Butter – the main ingredient in buttercream that makes it so creamy.
- Powdered Sugar – to sweeten and thicken.
- Green Food Coloring – to color of course! Don’t use too much.
- Peppermint Extract + Vanilla – both are used to flavor the frosting.
- Milk – this thins out the frosting if needed.

Make the Batter
Start by throwing the chocolate and butter into a bowl. Melt the chocolate and butter together in the microwave until it’s all smooth and runny. Add in your body weight of sugar, and some of that cocoa powder.
Stream in some vanilla and all 4 of those eggs. Stir it all together then toss in your flour and recognize that only the good brownie recipes call for more sugar than flour. OH YEAH. You heard me.
Add in the final dry ingredients: salt and baking powder! Not a lot….just a teensy bit. Et voila! Brownie batter.
Give Each Brownie Bite a Kiss
Spoon the brownie batter into some lined mini muffin tins {about 1 tablespoon or so of batter} and grab some Mint Truffle Kisses.
Unwrap about 48 of these guys and squish them down into the brownie batter. I don’t sink mine way down because if they touch the bottom of the pan, then the chocolate gets sort of crispy…and crispy brownies are illegal in my house.
Bake + Cool
After a few minutes in the oven, they come out looking poofy and yummy. Let these cool and work on making some frosting.
Mint Frosting
For the buttercream, I just tossed some really soft butter into my KitchenAid mixer with some powdered sugar, vanilla and peppermint extract.
After a minute or so, I got my frosting. A touch of green food coloring and a few more spins in the mixer, my frosting was DUN!! {*Note- I didn’t have to add in any milk. If your frosting is too dry, add in tiny splashes of milk until it starts coming together.*}
I ended up using a Wilton disposable piping bag and a big fat tip to make these frosting domes. And, I cut some extra kisses into 4 to add as garnish.

Chocolate Mint Brownie Bites
Ingredients
for the brownies-
- 1 cup butter
- 6 oz Scharffen Berger bittersweet dark chocolate
- 5 tablespoons Scharffen Berger cocoa powder
- 2 cups granulated sugar
- 4 whole eggs
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 3/4 cup all purpose flour
- 48 Mint Truffle Hershey Kisses plus more for garnish if desired
for the frosting-
- 1/2 cup butter softened
- 2 cups powdered sugar
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla
- splash milk if needed
- green food coloring
Instructions
- Preheat oven to 350 degrees. Line 48 mini muffin tins with paper liners and set side.
- Melt butter and chocolate together in microwave. Stir in sugar and cocoa. Stir in eggs and vanilla. Stir in all dry ingredients. Spoon into prepared pan to fill 2/3 way. Unwrap Mint Truffle kisses and press 1 into each brownie bite. Bake 10-12 minutes or until brownie is thoroughly cooked. Cool completely.
- For the frosting, whip all ingredients together in a large stand mixer until smooth and creamy. Frost the tops of each brownie bite and add a piece of mint truffle kiss to each one as decoration. Serve.

I have been trying to figure out how to make my mint truffle brownies easily handle-able for the L.A. Bloggers’ Bake Sale next month and I think this is IT! Thanks! Love the photos because I recognize so much in them. I always use Sharfenberger or Chuao chocolate, have the Xoxo bowl and the le Creuset spatula. Looks like one of my posts. Kind of funny to recognize so much.
